The secret to good steak on a stick is to keep it out of the flames, and to keep turning it so that it heats through evenly. You can tell when it’s done when it stops dripping blood and starts leaking clear, tasty meat juices. Wait for it to cool before you gobble it down, or you’ll burn your tongue and won’t be able to enjoy the smokey flavor of fire-cooked meat. Bon apetit.
